  • 7 ounces pkg. elbow macaroni
  • 4 quarts boiling water
  • 1/4 cup Italian dressing
  • 1 tablespoon salt
  • 1 can Italian green beans, drained and cut, 16 oz
  • 1 cup artichoke hearts, drained and halved, 14 oz
  • 1 1/2 cups carrots, sliced
  • 3/4 cup ripe olives, sliced
  • 1/2 cup radishes, sliced
  • 1 cup green pepper, chopped
  • 1/4 cup green onion, chopped
  • 1 cup Italian dressing
  • 1/3 cup mayonnaise
  • 1 cup provolone(4 oz) or mozzarella cheese, shredded
  • - anchovies
  • - tomato wedges
  • - ripe olives

How To Make salad olympia

  • Step 1
    Cook macaroni in 4 quarts boiling water, the 1/4 cup Italian dressing and salt til tender, yet firm, about 10 minutes. Drain. Marinate cooked macaroni, green beans, artichoke hearts, carrots, sliced olives, radishes, green pepper and green onion in 1 cup Italian dressing for 2 hours, turning frequently,. Add mayonnaise and cheese and chill til ready to serve. Garnish with anchovies, tomato wedges or ripe olives.
