A friend of my mother's gave her this recipe years ago. I love to make this when it's too hot to cook in the summer. It's substantial enough with some Italian bread to be the entire lunch! Sometimes I add diced chicken to it if I have it.

Ingredients

  • 1 box
    linguine noodes (1 lb.)
  • 1 pkg
    italian salad seasoning or dressing
  • 1 bottle
    your favorite italian dressing
  • 1
    onion, chopped finely
  • 1
    handful cherry tomatoes, havled

How to Make Quick Linguini Summer Salad

Step-by-Step

  1. Boil linguine to your preferred 'doneness'. Drain.
  2. Sprinkle on the package of seasoning, add the bottle of dressing and chopped onions. Mix thoroughly.
  3. Refrigerate until chilled. I like to sprinkle Parmesan cheese on top, and serve with Italian bread.
