quick & easy macaroni salad

My favorite macaroni salad growing up was from the deli in a G.C. Murphy back in the 50's and 60's. When the deli closed, my mom found a recipe which closely reminded me of the deli's. Tried to duplicate my mother's recipe where she actually made her own mayonnaise, but being a working mother, time restraints did not allow it. So I tried different shortcuts and this one seems to work. My family loves this one and I am asked to bring it to every picnic/party/cookout we go to. I get a lot of compliments on this recipe, so I thought I would share.

Ingredients

  • 16 ounces pasta (any shape you enjoy will do)
  • 1 large vidalia onion, chopped
  • 6 stalks celery, chopped
  • 8 ounces sweet & sour dressing (i prefer marzetti's)
  • 1 1/2 tablespoons yellow mustard
  • 1 to 2 cups mayonnaise depending how moist you like your salad
  • 6 - hard boiled eggs, chopped

How To Make quick & easy macaroni salad

  • Step 1
    While hard-boiling the eggs, chop the celery and onions.
  • Step 2
    In a bowl, mix the celery, onions, sweet and sour dressing and mustard. Put in refrigerator to let the flavors meld.
  • Step 3
    Cook the pasta in salted water per package directions. Be sure not to overcook.
  • Step 4
    Drain pasta and run under cold water to stop cooking process.
  • Step 5
    Add to celery/onion mixture and let absorb flavors for a few minutes.
  • Step 6
    Add enough mayonnaise to get the consistency you prefer and the hard-boiled eggs. Chill until ready to serve.
  • Step 7
    If you want to make a low calorie version, both the dressing are in fat-free varieties.
