picnic perfect tortellini salad

I had a package of tortellini I'd bought at a local pasta shop and wasn't quite sure what to do with it (I'd never made tortellini). We were having a cookout and the temperature outside was in the 90's so I knew I wanted to make a cold salad with an oil based dressing. I scavenged through my fridge for things I thought would compliment the tortellini and came up with this recipe. Enjoy!! (We sure did!)

Ingredients

  • 1 pound tortellini, cheese stuffed
  • 1 cup parmesan cheese
  • 8 slices hard salami, diced
  • 1 1/4 cups cherry tomatoes, sliced in half
  • 3/4 cup pickled banana peppers
  • 1/2 cup olive oil, extra virgin
  • 2 tablespoons red wine vinegar
  • 2 teaspoons yellow mustard
  • 1 clove garlic, minced
  • 1 tablespoon mrs dash garlic & herb seasoning

How To Make picnic perfect tortellini salad

  • Step 1
    Cook pasta according to package directions. Drain and let cool.
  • Step 2
    For dressing: combine oil, vinegar, mustard, garlic and mrs dash seasoning and whisk together.
  • Step 3
    Add cheese, salami, tomatoes and banana peppers to a bowl with the tortellini. Add the dressing and mix well. Serve cold.
