I learned this by mistake. My son called with an emergency one afternoon just as I was starting a pasta dish for dinner. Water boiled, I had put the pssta in and it had just started to boil again. I took the pot off the burner and left the house to help him. When I got home, thinking I would have to pour the mess out, and to my astonished surprise~~~the pasta was perfect. Haven't made it the "old-fashioned way since. Sure take the "pot-watching" equation out of pasta cooking.
