peggi's tortellini salad

I used to make this for the salad bar at a restaurant I worked in. Well received. I don't know how many it serves, as I made the recipe up myself & it was on a salad bar. It is my own concoction.

Ingredients

  • 1 package frozen, 3 cheese tortelleni,thawed
  • 1 bottle creamy italian dressing (buy larger bottle)
  • 1/2 cup fresh grated parmesan cheese
  • 1/2 - green bell pepper, chopped fine
  • 1/2 - red bell pepper, chopped fine
  • 1/2 cup green onions, chopped
  • - salt & pepper to taste
  • 1/2 package sliced pepperoni (may use more)
  • 1 cup sliced black olives
  • 1/2 cup sun dried tomatoes ( in bag)

How To Make peggi's tortellini salad

  • Step 1
    Thaw Tortelleni noodles. Do not cook. Add all remaining ingredients, using only as much of the salad dressing as needed to coat the salad but not be swimming in dressing. Salt & pepper to taste. Refrigerate at least 4 hours for full flavor, preferably 3 days or more for the best flavor.
