I just love Asian cuisine, and especially lo mein. This is such a delicious and easy recipe and it's something different to have at those family bbq's.

Ingredients
- 1 package lo mein noodles ( 8 oz. )
- 1/3 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup orange juice, fresh
- 1/4 teaspoon ground red pepper (cayenne)
- 3 medium carrots, shredded ( 2 cups )
- 1 large red bell pepper, cut into 1/4 inch strips
- 6 medium green onions, sliced ( 6 tbsp.)
- 1/2 cup dry roasted peanuts
How To Make peanut noodle salad

Step 1Break noodles into thirds. Cook and drain as directed on package. Rinse with cold water; drain

Step 2Mix peanut butter, soy sauce, orange juice, and red pepper until smooth.

Step 3Toss noodles, peanut butter mixture and remaining ingredients until well incorporated. Refrigerate until served.
