This is a quick and satisfying pasta salad. It's a go to recipe for me when going to a BBQ or a pot luck. It can also be adapted to your family by changing the meat and vegetables to reflect your tastes. I hope you enjoy it as much as we do.

Ingredients

  • 1/2 pound tortellini
  • 1 cup cubed salami or ham
  • 1 cup shredded carrots
  • 1 cup frozen peas or snap peas, blanched
  • 1/2 cup roasted red peppers, chopped
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 - shallot, minced
  • - freshly ground pepper
  • - kosher salt

How To Make pasta salad with salami and vegetables

  • Step 1
    Bring a large pot of salted water to boil. Add the tortellini and cook as label directs; drain and rinse under cold water. Transfer to a large bowl.
  • Step 2
    Add the salami (or ham), carrots, peas, and roasted red peppers to the bowl with the tortellini.
  • Step 3
    Make the dressing: Whisk the olive oil, white wine vinegar, shallot, 1/2 tsp salt and pepper to taste in a bowl. Pour over the salad and toss to coat. Season with salt and pepper to tase.
  • Step 4
    Chill for up to 3 hours before serving.
