1 ccubed salami or ham
1 cshredded carrots
1 cfrozen peas or snap peas, blanched
1/2 croasted red peppers, chopped
1/3 cextra-virgin olive oil
2 Tbspwhite wine vinegar

How to Make Pasta Salad with Salami and Vegetables
- Bring a large pot of salted water to boil. Add the tortellini and cook as label directs; drain and rinse under cold water. Transfer to a large bowl.
- Add the salami (or ham), carrots, peas, and roasted red peppers to the bowl with the tortellini.
- Make the dressing: Whisk the olive oil, white wine vinegar, shallot, 1/2 tsp salt and pepper to taste in a bowl. Pour over the salad and toss to coat. Season with salt and pepper to tase.
- Chill for up to 3 hours before serving.
