This is a quick and satisfying pasta salad. It's a go to recipe for me when going to a BBQ or a pot luck. It can also be adapted to your family by changing the meat and vegetables to reflect your tastes. I hope you enjoy it as much as we do.

Ingredients For pasta salad with salami and vegetables

1/2 lbtortellini

1 ccubed salami or ham

1 cshredded carrots
-
1 cfrozen peas or snap peas, blanched

1/2 croasted red peppers, chopped

1/3 cextra-virgin olive oil
-
2 Tbspwhite wine vinegar
-
1shallot, minced
-
freshly ground pepper

kosher salt
How To Make pasta salad with salami and vegetables

1Bring a large pot of salted water to boil. Add the tortellini and cook as label directs; drain and rinse under cold water. Transfer to a large bowl.

2Add the salami (or ham), carrots, peas, and roasted red peppers to the bowl with the tortellini.

3Make the dressing: Whisk the olive oil, white wine vinegar, shallot, 1/2 tsp salt and pepper to taste in a bowl. Pour over the salad and toss to coat. Season with salt and pepper to tase.

4Chill for up to 3 hours before serving.
