This is a quick and satisfying pasta salad. It's a go to recipe for me when going to a BBQ or a pot luck. It can also be adapted to your family by changing the meat and vegetables to reflect your tastes. I hope you enjoy it as much as we do.

Ingredients

  • 1/2 lb
    tortellini
  • 1 c
    cubed salami or ham
  • 1 c
    shredded carrots
  • 1 c
    frozen peas or snap peas, blanched
  • 1/2 c
    roasted red peppers, chopped
  • 1/3 c
    extra-virgin olive oil
  • 2 Tbsp
    white wine vinegar
  • 1
    shallot, minced
  • ·
    freshly ground pepper
  • ·
    kosher salt

How to Make Pasta Salad with Salami and Vegetables

Step-by-Step

  1. Bring a large pot of salted water to boil. Add the tortellini and cook as label directs; drain and rinse under cold water. Transfer to a large bowl.
  2. Add the salami (or ham), carrots, peas, and roasted red peppers to the bowl with the tortellini.
  3. Make the dressing: Whisk the olive oil, white wine vinegar, shallot, 1/2 tsp salt and pepper to taste in a bowl. Pour over the salad and toss to coat. Season with salt and pepper to tase.
  4. Chill for up to 3 hours before serving.
