This is another yummy version of the never ending ways to make pasta salad, it's delicious!

Ingredients

  • 16 ounces dry pasta, your favorite
  • 8 ounces mexican creama, or sour cream
  • 1 package dry ranch dressing mix
  • 1 - poblano
  • 1 - red bell pepper
  • 1/4 cup sweet onion
  • 3 slices bacon
  • 3 - hard boiled eggs
  • 1 cup cheddar cheese, grated
  • - salt and pepper to taste

How To Make pasta salad with roasted peppers

  • Step 1
    Cook bacon till crisp, let cool and crumble. Hard boil eggs, peel and dice. Grate cheese.
  • Step 2
    Roast peppers in 350° oven for 1 hr. Remove skin and dice, finely dice onion as well. Boil pasta according to package directions for al dente. Drain.
  • Step 3
    Mix sour cream and Ranch dressing mix together, mix well into pasta. Add remaining ingredients. Refrigerate until serving.
