Ingredients
- 16 ounces dry pasta, your favorite
- 8 ounces mexican creama, or sour cream
- 1 package dry ranch dressing mix
- 1 - poblano
- 1 - red bell pepper
- 1/4 cup sweet onion
- 3 slices bacon
- 3 - hard boiled eggs
- 1 cup cheddar cheese, grated
- - salt and pepper to taste
How To Make pasta salad with roasted peppers

Step 1Cook bacon till crisp, let cool and crumble. Hard boil eggs, peel and dice. Grate cheese.

Step 2Roast peppers in 350° oven for 1 hr. Remove skin and dice, finely dice onion as well. Boil pasta according to package directions for al dente. Drain.

Step 3Mix sour cream and Ranch dressing mix together, mix well into pasta. Add remaining ingredients. Refrigerate until serving.
