Ingredients

  • 16 oz
    dry pasta, your favorite
  • 8 oz
    mexican creama, or sour cream
  • 1 pkg
    dry ranch dressing mix
  • 1
    poblano
  • 1
    red bell pepper
  • 1/4 c
    sweet onion
  • 3 slice
    bacon
  • 3
    hard boiled eggs
  • 1 c
    cheddar cheese, grated
  • ·
    salt and pepper to taste

How to Make Pasta Salad with roasted peppers

Step-by-Step

  1. Cook bacon till crisp, let cool and crumble. Hard boil eggs, peel and dice. Grate cheese.
  2. Roast peppers in 350° oven for 1 hr. Remove skin and dice, finely dice onion as well. Boil pasta according to package directions for al dente. Drain.
  3. Mix sour cream and Ranch dressing mix together, mix well into pasta. Add remaining ingredients. Refrigerate until serving.
