A nice change from pasta salads with a mayonnaise based dressing. I made this salad for a picnic with friends in August and it was a refreshing change with the sweet/tart poppy seed dressing.

  • 16 oz
    pasta of choice
  • 1 1/chic2 c
    chicken cooked and cubed
  • 1
    english cucumber, chopped
  • 1 c
    red grapes, halved
  • 1/4 c
  • 3/4 tsp
    dry mustard, i prefer coleman's
  • 2 Tbsp
    apple cider vinegar
  • 1/3 c
    olive oil, extra virgin
  • 1 Tbsp
    poppy seeds

How to Make Pasta Salad with Chicken and Poppy Seed Dressing


  1. Bring a large pot of salted water to a boil then cook pasta according to package directions. Drain then rinse under cold water until cool.
  2. Add pasta, chicken, cucumber and grapes to a bowl.
  3. Make the dressing by whisking together the sugar, mustard powder, salt, vinegar, olive oil and poppy seeds until blended. Pour dressing over pasta and toss.
  4. Cover and refrigerate at least an hour. Serve.
