A nice change from pasta salads with a mayonnaise based dressing. I made this salad for a picnic with friends in August and it was a refreshing change with the sweet/tart poppy seed dressing.

Ingredients
- 16 ounces pasta of choice
- 1 1/chic2 cups chicken cooked and cubed
- 1 - english cucumber, chopped
- 1 cup red grapes, halved
- 1/4 cup sugar
- 3/4 teaspoon dry mustard, i prefer coleman's
- 2 tablespoons apple cider vinegar
- 1/3 cup olive oil, extra virgin
- 1 tablespoon poppy seeds
How To Make pasta salad with chicken and poppy seed dressing

Step 1Bring a large pot of salted water to a boil then cook pasta according to package directions. Drain then rinse under cold water until cool.

Step 2Add pasta, chicken, cucumber and grapes to a bowl.

Step 3Make the dressing by whisking together the sugar, mustard powder, salt, vinegar, olive oil and poppy seeds until blended. Pour dressing over pasta and toss.

Step 4Cover and refrigerate at least an hour. Serve.
