Ingredients
- 3 cloves garlic sliced
- 1/4 cup olive oil
- 8 ounces cherry tomatoes halved
- 1/2 cup fresh basil chopped
- 1/4 cup fresh pea shoots
- 2 tablespoons capers drained
- 2 teaspoons lemon juice
- 1 teaspoon grated lemon zest
- 1/2 teaspoon salt
- 8 ounces angel hair pasta
- 4 ounces fresh mozzarella torn into pieces
- freshly cracked black pepper
How To Make pasta salad w garlic & olive oil marinated tomato

Step 1Place the olive oil in a small saucepan. Add the garlic chips and cook over med high heat until garlic is browned. Remove from heat and let cool.

Step 2Place the tomatoes, basil, capers, pea shoots, lemon juice, lemon zest, and salt. Strain the oil over the tomato mixture. Discard the garlic sliced. mix well and let marinate for 30 minutes.

Step 3Meanwhile cook the angel hair in boiling salted water. Drain and rinse in cold water. Once cold add the pasta to the tomato mixture. Add the mozzarella pieces and stir all together. Top with cracked pepper.
