This was always a favorite made during Thanksgiving and Christmas in our house, but you can make it anytime, even for picnics. I like to use tricolor rotini, bow tie pasta or medium shell pasta. Some people use small elbow macaroni.

macaroni, cooked
1 c
diced onion
1 c
diced tomato
1 small
diced cucumber (pickling)
1 Tbsp
sweet pickle relish
3 Tbsp
salt and pepper to taste

How to Make Pasta Salad (Southern name -- Macaroni Salad)


  • 1Using a large pot, cook pasta until tender. Using a colander, drain pasta and run cold water over the pasta to cool it down for about a minute. Pour pasta back into the pot.
  • 2Add all ingredients. Stir in mayonnaise. Stir until well mixed. Salt and pepper to taste. Cover and refrigerate.
  • 3Before serving, stir again to make sure the pasta is well covered. You may want to add another tablespoon of mayonnaise.
  • 4If you don't like onion or tomatoes, you can omit them. Personally, I think it makes the salad.
