pasta salad (southern name -- macaroni salad)

This was always a favorite made during Thanksgiving and Christmas in our house, but you can make it anytime, even for picnics. I like to use tricolor rotini, bow tie pasta or medium shell pasta. Some people use small elbow macaroni.

Ingredients For pasta salad (southern name -- macaroni salad)

  • 1 box
    macaroni, cooked
  • 1 c
    diced onion
  • 1 c
    diced tomato
  • 1 sm
    diced cucumber (pickling)
  • 1 Tbsp
    sweet pickle relish
  • 3 Tbsp
    mayonnaise
  • salt and pepper to taste

How To Make pasta salad (southern name -- macaroni salad)

    Using a large pot, cook pasta until tender. Using a colander, drain pasta and run cold water over the pasta to cool it down for about a minute. Pour pasta back into the pot.

    Add all ingredients. Stir in mayonnaise. Stir until well mixed. Salt and pepper to taste. Cover and refrigerate.

    Before serving, stir again to make sure the pasta is well covered. You may want to add another tablespoon of mayonnaise.

    If you don't like onion or tomatoes, you can omit them. Personally, I think it makes the salad.
