pasta salad (southern name -- macaroni salad)
This was always a favorite made during Thanksgiving and Christmas in our house, but you can make it anytime, even for picnics. I like to use tricolor rotini, bow tie pasta or medium shell pasta. Some people use small elbow macaroni.

Ingredients
- 1 box macaroni, cooked
- 1 cup diced onion
- 1 cup diced tomato
- 1 small diced cucumber (pickling)
- 1 tablespoon sweet pickle relish
- 3 tablespoons mayonnaise
- - salt and pepper to taste
How To Make pasta salad (southern name -- macaroni salad)

Step 1Using a large pot, cook pasta until tender. Using a colander, drain pasta and run cold water over the pasta to cool it down for about a minute. Pour pasta back into the pot.

Step 2Add all ingredients. Stir in mayonnaise. Stir until well mixed. Salt and pepper to taste. Cover and refrigerate.

Step 3Before serving, stir again to make sure the pasta is well covered. You may want to add another tablespoon of mayonnaise.

Step 4If you don't like onion or tomatoes, you can omit them. Personally, I think it makes the salad.
