My husband gets tired and bored with eating salad, so I came up with this dish and he loves it very much. It's a great dish to have in the summer or any time of year. I make this often and there are no left overs, so hope you enjoy it as much as he does!
2Cut your cucumber in half, then lengthwise and slice cubes. Dice the tomato. Slice red onion in very thin circles. Drain the olives and mozarella, if using fresh.
3Add all ingredients to the pasta. Season with salt, pepper, parsley and mix well.
Add your Good Seasonings dressing, mayo, olive oil and last the croutons.
Best refrigerated for a few hours before serving.
