pasta salad my way

My husband gets tired and bored with eating salad, so I came up with this dish and he loves it very much. It's a great dish to have in the summer or any time of year. I make this often and there are no left overs, so hope you enjoy it as much as he does!

Ingredients

  • 1 box rotini (regular or whole wheat pasta)
  • 1 large cucumber
  • 1 large tomato
  • 1 can black olives (drained)
  • 1 jar green olives (drained)
  • 1 medium red onion
  • 1 - carrot, shredded
  • 1/4 cup cubed mozarella or balls
  • 1/4 cup pine nuts
  • 1/2 teaspoon dried parsley
  • 1 tablespoon mayonnaise
  • 1 bottle good seasonings salad packet mix (follow directions)
  • 1 cup garlic and herb croutons
  • - salt and pepper to taste
  • - drizzle of olive oil

How To Make pasta salad my way

  • Step 1
    Cook Rotini, drain and let cool.
  • Step 2
    Cut your cucumber in half, then lengthwise and slice cubes. Dice the tomato. Slice red onion in very thin circles. Drain the olives and mozarella, if using fresh.
  • Step 3
    Add all ingredients to the pasta. Season with salt, pepper, parsley and mix well. Add your Good Seasonings dressing, mayo, olive oil and last the croutons. Best refrigerated for a few hours before serving. You can add sauteed shrimp to this dish also.
