My family loves Pasta Salad and I am always looking and trying new recipes. This recipe is a sweet one but I have opted to use low fat when I can. Great in the summer and goes well with sandwiches on the weekend.

Ingredients

  • 1 pound macaroni, elbow
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 - bell pepper,chopped
  • 4 - carrots, shredded
  • 1/2 - red onion, optional
  • 2 cups mayonnaise, light
  • 1 cup vinegar
  • 1 can condensed milk, low fat
  • 1/4 cup sugar

How To Make pasta salad

  • Step 1
    Cook macaroni, drain and cool.
  • Step 2
    Mix bell pepper, carrots and onion with the macaroni.
  • Step 3
    Mix well together milk, sugar, mayonnaise, salt, pepper and vinegar.
  • Step 4
    Blend this mixture into the macaroni and vegatables, mix well.
  • Step 5
    Chill for at lwast 2 hours or overnight. Mix well before serving.
