pasta chicken salad-for a crowd!!

Every time I make this, someone asks for the recipe. It can be a meal in itself with all the ingredients, flavors and textures. I love eating this salad in the springtime and summer.

Ingredients

  • 2 pounds bow tie pasta
  • 4 - chicken breast-skinless and boneless-boiled and drained
  • 1 can sliced water chestnuts-drained
  • 20 ounces pineapple tidbits-drained
  • 1 package craisins
  • 1 cup celery-chopped
  • 1 cup cashews , pecans or walnuts-chopped
  • 1 cup seedless grapes-cut in half
  • 1 bunch scallions-chopped
  • 16 ounces marzetti's cole slaw dressing
  • 1 pinch celery salt
  • 1 pinch garlic powder
  • - salt and pepper to taste

How To Make pasta chicken salad-for a crowd!!

  • Step 1
    Cook pasta according to package directions. Drain pasta and let cool completely. Boil chicken and let cool. Chop chicken into bite size pieces. Mix all ingredients together except dressing. Pour dressing over salad right before time to serve to preserve the "crunch"
  • Step 2
    Note-I like to cook pasta in advance making it al dente . I then pour 1/2 of dressing on cooked pasta and place in fridge over night in an air tight container. I also cook the chicken the day before and keep it in some of its chicken broth in the refrigerator until time to serve. St this point, I chop it up in place in the salad. I also love using toasted pecans and sprinkling them on top.

    Note—this recipe can be cut into half if you are not feeding a large crowd!
