Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons sun dried tomatoes
  • 1/2 cup sweet red pepper, copped
  • 1/4 cup green onion, chopped
  • 1 can sliced ripe olives, drained
  • 3 tablespoons chopped parsley
  • 1 teaspoon olive oil, extra virgin
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon dry mustard

How To Make orzo salad

  • Step 1
    Cook the orzo according to the package directions, omitting any salt and fat; drain.
  • Step 2
    Chop the tomatoes and soak them in boiling water for 10 minutes.
  • Step 3
    Combine the orzo, tomatoes, red pepper and the next three ingredients in a bowl; toss gently.
  • Step 4
    Combine the olive oil, vinegar and mustard; stir well with a wire whisk.
  • Step 5
    Pour over the orzo mixture; toss gently.
  • Step 6
    Cover and chill for at least two hours.
