Ingredients
- 1 cup orzo pasta
- 2 tablespoons sun dried tomatoes
- 1/2 cup sweet red pepper, copped
- 1/4 cup green onion, chopped
- 1 can sliced ripe olives, drained
- 3 tablespoons chopped parsley
- 1 teaspoon olive oil, extra virgin
- 1/4 cup red wine vinegar
- 1/2 teaspoon dry mustard
How To Make orzo salad

Step 1Cook the orzo according to the package directions, omitting any salt and fat; drain.

Step 2Chop the tomatoes and soak them in boiling water for 10 minutes.

Step 3Combine the orzo, tomatoes, red pepper and the next three ingredients in a bowl; toss gently.

Step 4Combine the olive oil, vinegar and mustard; stir well with a wire whisk.

Step 5Pour over the orzo mixture; toss gently.

Step 6Cover and chill for at least two hours.
