I got this recipe from my daughter-in-law, Kristen. It is a little different from a lot of the oriental chicken salads that you see. It is very delicious. It is always a big hit at work!

Ingredients

  • - grapes, seedless
  • 2 - chicken breasts, cooked and chopped
  • 8 ounces shredded cabbage
  • 1 cup halved cashews
  • 8 - scallions, chopped
  • 2 tablespoons sunflower seeds, shelled
  • 2 packages oriental flavored ramen noodles
  • 2 packages seasoning from noodles
  • 3/4 cup vegetable oil
  • 6 teaspoons white vinegar
  • 4 tablespoons sugar
  • - salt and pepper

How To Make oriental chicken salad

  • Step 1
    Break up the noodles and cook according to package directions. (Save the seasoning to use for the dressing.) Drain the noodles.
  • Step 2
    Cook the chicken breasts and chop. Combine the cabbage, cashews, sunflower seeds, scallions,noodles, grapes and chicken. Mix all together well.
  • Step 3
    Combine the dressing ingredients and pour over the salad. If doubling the recipe, for the salad dressing, use 4 packs of seasoning, 1 cup oil, 9 teaspoons of vinegar and 6 tablespoons of sugar
  • Step 4
    Some hints: For the cabbage it is much easier to use a prechopped bag of coleslaw. The grapes seem to work out better if they are halved. The chicken can be prepared however you like, but a good way is to poach in water seasoned with soy sauce or teryaki sauce. it adds a good flavor
