I got this recipe from my daughter-in-law, Kristen. It is a little different from a lot of the oriental chicken salads that you see. It is very delicious. It is always a big hit at work!

    grapes, seedless
  • 2
    chicken breasts, cooked and chopped
  • 8 oz
    shredded cabbage
  • 1 c
    halved cashews
  • 8
    scallions, chopped
  • 2 Tbsp
    sunflower seeds, shelled
  • 2 pkg
    oriental flavored ramen noodles
  • 2 pkg
    seasoning from noodles
  • 3/4 c
    vegetable oil
  • 6 tsp
    white vinegar
  • 4 Tbsp
  • ·
    salt and pepper

How to Make Oriental Chicken Salad


  1. Break up the noodles and cook according to package directions. (Save the seasoning to use for the dressing.) Drain the noodles.
  2. Cook the chicken breasts and chop. Combine the cabbage, cashews, sunflower seeds, scallions,noodles, grapes and chicken. Mix all together well.
  3. Combine the dressing ingredients and pour over the salad. If doubling the recipe, for the salad dressing, use 4 packs of seasoning, 1 cup oil, 9 teaspoons of vinegar and 6 tablespoons of sugar
  4. Some hints: For the cabbage it is much easier to use a prechopped bag of coleslaw. The grapes seem to work out better if they are halved. The chicken can be prepared however you like, but a good way is to poach in water seasoned with soy sauce or teryaki sauce. it adds a good flavor
