I got this recipe from my daughter-in-law, Kristen. It is a little different from a lot of the oriental chicken salads that you see. It is very delicious. It is always a big hit at work!

Ingredients
- - grapes, seedless
- 2 - chicken breasts, cooked and chopped
- 8 ounces shredded cabbage
- 1 cup halved cashews
- 8 - scallions, chopped
- 2 tablespoons sunflower seeds, shelled
- 2 packages oriental flavored ramen noodles
- 2 packages seasoning from noodles
- 3/4 cup vegetable oil
- 6 teaspoons white vinegar
- 4 tablespoons sugar
- - salt and pepper
How To Make oriental chicken salad

Step 1Break up the noodles and cook according to package directions. (Save the seasoning to use for the dressing.) Drain the noodles.

Step 2Cook the chicken breasts and chop. Combine the cabbage, cashews, sunflower seeds, scallions,noodles, grapes and chicken. Mix all together well.

Step 3Combine the dressing ingredients and pour over the salad. If doubling the recipe, for the salad dressing, use 4 packs of seasoning, 1 cup oil, 9 teaspoons of vinegar and 6 tablespoons of sugar

Step 4Some hints: For the cabbage it is much easier to use a prechopped bag of coleslaw. The grapes seem to work out better if they are halved. The chicken can be prepared however you like, but a good way is to poach in water seasoned with soy sauce or teryaki sauce. it adds a good flavor
