orange sweet & sour pasta salad

I am a firm believer in making do with what you have..I was going to a summer patio party..I love pasta salad, was concerned with eggs and warm mayonaise due to the 104 degree weather lol..so I looked in my freezer and determined what I had to make a nice dressing and this is what I came up with

Ingredients

  • 1 box elbow macaroni, cooked
  • 2 tablespoons hidden valley ranch powder
  • 1 - sweet onion
  • 1 package peas, frozen petite
  • 1 package corn kernels, frozen
  • 4 sticks celery
  • 1/2 cup cilantro, fresh
  • 1/2 - small jar of sweet pickles
  • 1 can black olives
  • DRESSING
  • 1/2 can orange juice, frozen concentrate
  • 4 tablespoons seasoned rice vinegar (garlic)
  • 4 tablespoons olive oil
  • 1 teaspoon fresh grated ginger
  • 1/2 teaspoon red pepper flakes

How To Make orange sweet & sour pasta salad

  • Step 1
    Boil one box of your preferred pasta..drain well..do not rinse.add to a large bowl..sprinkle with hidden valley ranch powder..stir until coated..the spices will absorb into the noodle..set aside to finish cooling
  • Step 2
    chop and prep all of the vegetables..add the frozen corn and peas on top of the pasta..mix other vegetables in well
  • Step 3
    add all dressing ingredients to a bowl and whisk..pour over pasta..stir and let in cool for at least a hour in the fridge
