I made this one day this summer because the heat was agony and I wanted something cool for lunch. My friend Mari went nuts over it gave it its name. He asks me to make it constantly.

Ingredients

  • 2
    cucumbers, peeled & chopped
  • 3 large
    tomatoes, chopped
  • 1 medium
    onion, finely chopped
  • 1 large
    green bell pepper, seeded & chopped
  • 1 small
    can sliced black olives, drained
  • 1 box
    rotini pasta, cooked & cooled in ice water
  • 1 pkg
    pepperoni, quartered
  • 1/2 c
    grated parmesan cheese
  • 1 bottle
    fat free italian salad dressing

How to Make Mari's Pasta Surprise

Step-by-Step

  1. The biggest step to this recipe is basically prepping all the vegetables. Once that's finished just drain the pasta well & mix everything together. Let it chill in the refrigerator for a couple of hours and it's great.
