My mom sometimes made this instead of potato salad at potlucks and cookouts. I was always excited when it made the rotation!

Ingredients

  • 16 ounces macaroni
  • 4-5 large carrots, scraped and grated
  • 1 large sweet onion, chopped
  • 1 large green bell pepper, chopped
  • 2 cups mayonnaise
  • 1 can sweetened condensed milk (14 oz)
  • 1/2 cup granulated sugar
  • 1/2 cup white vinegar
  • salt and pepper, to taste

How To Make macaroni salad

  • Step 1
    Cook the macaroni according to the package directions; drain. Rinse with cold water and drain well.
  • Step 2
    Combine the macaroni, carrot, onion, and bell pepper in a large bowl; toss gently.
  • Step 3
    Combine the mayonnaise and the remaining ingredients in a small bowl; stir well. Pour the dressing over the macaroni mixture; toss gently to combine.
  • Step 4
    Cover and chill for 8 hours (mixture will thicken as it chills).
