Ingredients

  • 6 cups cooked pasta (1# dry rotini or 3c. dry macaroni)
  • 2 cups celery, diced
  • 2 cups green and/or red pepper, diced
  • 1 cup scallions, thinly sliced
  • 4 ounces pimento, rinsed very well and drained
  • 2/3 to 1 cups sauce
  • 2 - hard boiled eggs, diced
  • SAUCE
  • 1 cup miracle whip or mayo
  • 2 tablespoons sugar
  • 2 teaspoons sugar
  • 1 tablespoon tarragon vinegar
  • 1 teaspoon celery seed
  • - dash worchester sauce
  • - crack of pepper to taste

How To Make macaroni salad

  • Step 1
    Pasta is best mixed while not yet cold.
  • Step 2
    Combine pasta, celery, scallions and peppers. Toss
  • Step 3
    Make sauce adjusting the sugar and vinegar to taste.
  • Step 4
    Add enough sauce, so salad is a little wetter than you want. The warm pasta will absorb the sauce. Toss.
  • Step 5
    Add pimentos, egg and lightly toss. Chill
