Ingredients For macaroni salad

  • 6 c
    cooked pasta (1# dry rotini or 3c. dry macaroni)
  • 2 c
    celery, diced
  • 2 c
    green and/or red pepper, diced
  • 1 c
    scallions, thinly sliced
  • 4 oz
    pimento, rinsed very well and drained
  • 2/3 to 1 c
    sauce
  • 2
    hard boiled eggs, diced
  • SAUCE
  • 1 c
    miracle whip or mayo
  • 2 Tbsp
    sugar
  • 2 tsp
    sugar
  • 1 Tbsp
    tarragon vinegar
  • 1 tsp
    celery seed
  • dash worchester sauce
  • crack of pepper to taste

How To Make macaroni salad

  • 1
    Pasta is best mixed while not yet cold.
  • 2
    Combine pasta, celery, scallions and peppers. Toss
  • 3
    Make sauce adjusting the sugar and vinegar to taste.
  • 4
    Add enough sauce, so salad is a little wetter than you want. The warm pasta will absorb the sauce. Toss.
  • 5
    Add pimentos, egg and lightly toss. Chill
