  • ·
    1/2 cup olive oil
  • ·
    1/2 cup tarragon vinegar
  • ·
    1 tsp. oregano
  • ·
    1 tsp. rosemary
  • ·
    salt and pepper to taste
  • ·
    1 pound spaghettini, broken into 3 inch lengths, cooked and drained
  • ·
    4 to 5 sweet italian sausages

How to Make Luncheon Pasta Salad with Italian Sausage


  1. Mix oil, vinegar, oregano, and rosemary. Season to taste with salt and pepper. Toss with spaghettini. Chill
  2. Remove sausage casings and put sausage on broiler pan. Broil, turning to cook on all sides, about 15 to 20 minutes. Cool. Cut sausage into 1/4 inch slices. Add to salad just before serving. Salad is best if brought almost to room temperature before serving. You can spiff it up with Parmesan cheese or sweet sliced gherkins for a different taste. Serves 8
