Great salad so fresh for summer. You can use any ingredients you want for the salad

Ingredients

  • LEMONGRASS DRESSING
  • 2 tablespoons lemongrass paste or freshly grated lemongrass
  • 3 cloves garlic minced
  • 1/4 cup each fish sauce, vegetable oil, and lime juice
  • 2 tablespoons rice vinegar
  • 4 tablespoons brown sugar
  • 2 tablespoons roasted red chili paste
  • VERMICELLI SALAD
  • 8 ounces vermicelli rice noodles
  • 2 medium carrots julienne cut
  • 1 cucumber julienne cut
  • fresh cilantro chopped
  • handful of crushed peanuts
  • protein of choice i used chicken cooked

How To Make lemongrass vermicelli salad

  • Step 1
    Mix the ingredients for the dressing together and set aside.
  • Step 2
    Cook the vermicelli noodles and drain run cold water over them to let them cool down. Toss with half of the dressing.
  • Step 3
    Place the noodle on a plate and top with the rest of the ingredients. Drizzle remaining dressing over the salad
