jerry and robin's favorite pasta salad

My husband and I enjoy experimenting with foods we've tasted in other places. Pasta salads were just beginning to pop up in our area, so we decided to try our hand at them. We both like different ingredients, so sometimes we make it with the ingredients we both like, then we each add our favorite ingredients to our own pasta salad. This is the recipe we always take to the church pot luck. I double the recipe and hope I get some before it's all gone! We've never had leftovers to take home. I've shared it with several of the ladies (and men!) at the church.

Ingredients

  • 1 large package tortellini, cheese stuffed
  • 1/4 cup newman's own olive oil and vinegar or light balsamic vinegar dressing
  • 1 teaspoon capers (he likes the big ones and i like the little ones!)
  • 1 small bottle sliced mushrooms
  • 1/2 cup cherry tomatoes, halved
  • 1 tablespoon sliced or chopped ripe olives (jerry's ingredient)
  • 3 - marinated and quartered artichoke hearts (robin's ingredient)
  • 2 tablespoons grated parmesan cheese
  • 2 cloves pressed garlic (or 1/2 to 1 tsp bottled minced garlic)
  • 1 medium ripe avocado, sliced or chunked
  • - seasoned salt and seasoned pepper to taste

How To Make jerry and robin's favorite pasta salad

  • Step 1
    Cook pasta according to package directions. Drain well and cool.
  • Step 2
    Add all other ingredients (all are optional and amounts can be adjusted to taste.)
  • Step 3
    Toss well and serve cool, but not chilled.
  • Step 4
    To balance out the salad to use as a meal, add slices/chunks of rotisserie chicken from the supermarket.
