I love making this salad in the summer because I don't have to turn the oven on, just the burner to heat up the pasta. It's quick and easy and is my twist on a traditional italian caprese salad. Enjoy!

Ingredients

  • 12 oz
    tri-colored tortellini
  • 1 c
    frozen edamame, thawed
  • 1 c
    grape tomatoes, halved
  • 1/4 c
    basil leaves, torn
  • 1/2 c
    fresh mozzarella balls
  • 1/2 c
    olive oil, extra virgin
  • 1/3 c
    balsamic vinegar

How to Make Italian Tortellini Salad

Step-by-Step

  1. Cook tortellini according to package instructions. Drain into a colander.
  2. Combine cooked tortellini, edamame, grape tomatoes, basil leaves, and mozzarella together in a large bowl.
  3. Combine olive oil and balsamic vinegar in a smaller bowl. Mix until well combined. Pour over the salad and toss. Serve warm.
