I love making this salad in the summer because I don't have to turn the oven on, just the burner to heat up the pasta. It's quick and easy and is my twist on a traditional italian caprese salad. Enjoy!

Ingredients
- 12 ounces tri-colored tortellini
- 1 cup frozen edamame, thawed
- 1 cup grape tomatoes, halved
- 1/4 cup basil leaves, torn
- 1/2 cup fresh mozzarella balls
- 1/2 cup olive oil, extra virgin
- 1/3 cup balsamic vinegar
How To Make italian tortellini salad

Step 1Cook tortellini according to package instructions. Drain into a colander.

Step 2Combine cooked tortellini, edamame, grape tomatoes, basil leaves, and mozzarella together in a large bowl.

Step 3Combine olive oil and balsamic vinegar in a smaller bowl. Mix until well combined. Pour over the salad and toss. Serve warm.
