Italian Tortellini Salad
12 oztri-colored tortellini
1 cfrozen edamame, thawed
1 cgrape tomatoes, halved
1/4 cbasil leaves, torn
1/2 cfresh mozzarella balls
1/2 colive oil, extra virgin
1/3 cbalsamic vinegar
How to Make Italian Tortellini Salad
- Cook tortellini according to package instructions. Drain into a colander.
- Combine cooked tortellini, edamame, grape tomatoes, basil leaves, and mozzarella together in a large bowl.
- Combine olive oil and balsamic vinegar in a smaller bowl. Mix until well combined. Pour over the salad and toss. Serve warm.
