There are many versions of this in Hawaii, but this is one that a friend gave me there.

Ingredients

  • 1 1/2 pounds potatoes, peeled, cooked, chopped
  • 1 cup macaroni, cooked, drained
  • 1/2 cup shredded carrots
  • 3 - green onions, finely chopped
  • 3 large hard boiled eggs, peeled, chopped
  • 1 cup frozen peas, defrosted
  • - salt and pepper, to taste
  • 3 - sweet pickles, coarsley chopped, optional
  • 2 stalks celery, chopped, optional
  • DRESSING:
  • 1 1/4 cups mayonnaise
  • 2 tablespoons sweet pickle juice
  • 1 tablespoon mustard

How To Make hawaiian potato salad

  • Step 1
    In a small bowl, mix together dressing ingredients, set aside.
  • Step 2
    Place the cooked potatoes, macaroni, diced eggs, carrots, peas, green onions, in a large bowl.
  • Step 3
    Add the the dressing and gently stir to combine.
