There are many versions of this in Hawaii, but this is one that a friend gave me there.

Ingredients

  • 1 1/2 lb
    potatoes, peeled, cooked, chopped
  • 1 c
    macaroni, cooked, drained
  • 1/2 c
    shredded carrots
  • 3
    green onions, finely chopped
  • 3 large
    hard boiled eggs, peeled, chopped
  • 1 c
    frozen peas, defrosted
  • ·
    salt and pepper, to taste
  • 3
    sweet pickles, coarsley chopped, optional
  • 2 stalk(s)
    celery, chopped, optional
  • DRESSING:

  • 1 1/4 c
    mayonnaise
  • 2 Tbsp
    sweet pickle juice
  • 1 Tbsp
    mustard

How to Make Hawaiian Potato Salad

Step-by-Step

  1. In a small bowl, mix together dressing ingredients, set aside.
  2. Place the cooked potatoes, macaroni, diced eggs, carrots, peas, green onions, in a large bowl.
  3. Add the the dressing and gently stir to combine.
