Browsing reels and found this recipe for macaroni salad from C J Eats recipes and it looked so good I had to try it. There is a wonderful tang from the vinegar and a lovely creaminess from the mayo. Will be a hit at the family BBQ or potluck.

Ingredients

  • 1 pound elbow macaroni
  • 1/4 cup apple cider vinegar
  • 1/2 cup onion shredded
  • 1/2 cup shredded carrots
  • 3 scallions chopped
  • 5 ounces tuna
  • 3 hard boiled eggs chopped
  • 2 1/2 cups mayonnaise (divided)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon white pepper

How To Make hawaiian macaroni salad

  • Step 1
    Overcook macaroni in salted water 3 to 4 minutes longer than recommended for al dente. Drain and cool
  • Step 2
    While mac. Is cooking shred carrots, onion, chop scallions
  • Step 3
    Add vinegar to macaroni and stir.
  • Step 4
    Add salt and peppers.
  • Step 5
    Add 2 cups mayonnaise and stir all ingredients together well.
  • Step 6
    Cover with saran or foil and chill for 1 hour.
  • Step 7
    After chilling add last 1/2 cup mayonnaise if needed to bring to preferred consistency.
  • Step 8
    Enjoy!
