greek spinach and orzo salad
Learning to prepare Mediterranean, healthy food. Tried this recipe on my family, and now it is a huge hit. The pine nuts add crunch and protein, and orzo completes it as a meal salad.

Ingredients For greek spinach and orzo salad

1/3 boxorzo pasta

1/2 cpine nuts

8 cbaby spinach leaves

1/2 cred onion, diced or sliced thin

4 ozgrape tomatoes (optional)

4 ozFeta cheese, crumbled

1/2 bottleMarie's Greek vinaigrette

1/4 bottleMarzetti lemon vinaigrette
How To Make greek spinach and orzo salad

1Cook orzo package according to directions on the box. Allow to cool.

2Preheat oven to 350 degrees F. Toast the pine nuts on a foil-lined cookie sheet for 5 - 10 minutes.

3Wash and drain baby spinach leaves, remove stems.

4Slice or chop red onion. Slice tomatoes in half.

5Add all ingredients to a salad bowl and toss.

6Combine both types of prepared salad dressing in a measuring cup.

7Once the salad is tossed together, drizzle with the desired amount of dressing.
