Learning to prepare Mediterranean, healthy food. Tried this recipe on my family, and now it is a huge hit. The pine nuts add crunch and protein, and orzo completes it as a meal salad.

Filled with textures and flavor, this Greek spinach and orzo salad will be on your menu weekly. Baby spinach and orzo pasta are the base for the pasta salad. It's tossed with crunchy onions, nutty pine nuts, juicy tomatoes, and salty Feta cheese. Greek and lemon vinaigrettes add the Greek flavors you'd expect. A delicious salad with any meal, but especially good alongside grilled chicken, fish, or steak.

Ingredients

  • 1/3 box orzo pasta
  • 1/2 cup pine nuts
  • 8 cups baby spinach leaves
  • 1/2 cup red onion, diced or sliced thin
  • 4 ounces grape tomatoes (optional)
  • 4 ounces Feta cheese, crumbled
  • 1/2 bottle Marie's Greek vinaigrette
  • 1/4 bottle Marzetti lemon vinaigrette

How To Make greek spinach and orzo salad

  • Cook the orzo according to package directions.
    Step 1
    Cook orzo package according to directions on the box. Allow to cool.
  • Toast the pine nuts.
    Step 2
    Preheat oven to 350 degrees F. Toast the pine nuts on a foil-lined cookie sheet for 5 - 10 minutes.
  • Wash and prep the spinach.
    Step 3
    Wash and drain baby spinach leaves, remove stems.
  • Slice or chop red onion. Slice tomatoes in half.

  • Add ingredients to a bowl and toss.
    Step 5
    Add all ingredients to a salad bowl and toss.
  • Combine salad dressing in a measuring cup.
    Step 6
    Combine both types of prepared salad dressing in a measuring cup.
  • Drizzle dressing over the salad.
    Step 7
    Once the salad is tossed together, drizzle with the desired amount of dressing.
