I've had this salad so many times, and we enjoy it every time. Occasionally I've added other ingredients (fresh peas, baby spinach leaves, chickpeas) when I wanted to adjust flavors. But it's really good as is.

It can be served warm or cold, and it goes well with a variety of main dishes.

To make it a main-dish lunch salad, add 2 cups chopped cooked chicken.
