When I would take my father to the hospital, while he was in with the doctor he would have me run down to the cafeteria and grab us up lunch. We always had the greek pasta salad ,so this is my take on it. (This is pretty quick to throw together you're basically just slicing an onion and some peppers, everything else is open and dump in the bowl)
rotini pasta , cooked according to package direction
green pepper i like to use multi colored peppers, a few handfuls thinly sliced
roasted red peppers, thinly sliced
garbonzo beans drained
red onion thinly sliced
pitted kalamata olives
kraft greek vinagrette
kraft sun dried tomatoe dressing
feta cheese chopped or crumbles
2 or 3 egg whites chopped (optional)
i slice cucumbers and put cucumber slices, pepperoncini, and cherry or grape tomatoes around edge of bowl
