1/3 cred wine vinegar

1/3 cextra-virgin olive oil

1 tspDijon mustard

2 clovegarlic, minced

1/2 tspdried oregano

1/4 tspfreshly ground black pepper

16 ozfarfalle pasta (bowtie)

1/3 mdred onion, quarter and thinly sliced

3/4English cucumber, diced

1 cgrape or cherry tomatoes, halved

1 mdorange or red bell pepper, diced

2/3 cKalamata olives

2/3 cFeta cheese

1/4 cfresh parsley
How To Make greek pasta salad

1Bring a large pot of salted water to a boil. Cook the pasta al dente according to package directions and drain well. Lightly rinse with cold water and drain again.

2Meanwhile, whisk the red wine vinegar, olive oil, Dijon mustard, garlic, dried oregano, salt, and freshly ground black pepper.

3Place the cooled pasta in a large bowl. Add the onion, cucumber, tomatoes, bell pepper, kalamata olives, feta cheese, and parsley.
