easy pasta salad

The cook time is for the pasta, since that is all you have to cook. I try to use the multi-colored pasta for parties and picnics. You can cool the pasta quickly using a cold water bath while you are prepping the vegetables. Be sure to drain it REALLY WELL before mixing to cut down on the wetness. I probably gave more time than needed for the prep work, but I wanted to take into consideration that there are a lot of beginner cooks out there! This salad will hold nicely in the fridge for a few days, but is definitely best the first and 2nd day.

Ingredients

  • 1 large cucumber - diced
  • 2 - 3 - celery hearts - thinly sliced
  • 1 - zucchini - shredded
  • 1 large tomato - diced or 12 cherry tomatoes, halved
  • 1 - yellow or red pepper, diced
  • 1 large can sliced black olives or 2 small cans sliced black olives (or , if you prefer, you can mix sliced green and sliced black)
  • 1 pound elbow or corkscrew macaroni - cooked, drained and cooled
  • 1 bottle ranch dressing (your favorite)
  • - onion powder, salt and pepper - to taste
  • - parmesan cheese - shaved or grated

How To Make easy pasta salad

  • Step 1
    Mix all ingrediants together except the shaved parmesan Cheese. Save this to top the pasta salad just before serving. That's it!!! I said it was easy!
