I wanted Macaroni Salad one day and I had very little ingredients. So I threw this together, and now everyone in my family begs me for it. It's the simple things in life I guess that makes people happy :)
1Cook elbow macaroni to directions on box. Drain, rinse with cold water. Set aside.
2Hard Boil 6(my family loves eggs so I use more)medium or large eggs until cooked thoroughly. (If you don't know how: place eggs in a pot, cover with water and bring to a steady boil for 3 minutes. Place cover on pot and turn heat off and let sit for 10 minutes.) Peel and dice all but 2 eggs, saving 2 eggs to use as a garnish.
3Mix peas, onions, mayo, salt, pepper, macaroni and eggs until completely mixed.
4Slice remaining two eggs thinly so you can place over the top of the salad and sprinkle with paprika. ENJOY
