This recipe was given to me by a wonderful friend, and one of the best cooks I have ever met. Everyone loves this salad and usually there are no leftovers when we have a party. It's great for the summer, because there is no mayonaise in it.

Ingredients

  • DRESSING

  • 3 clove
    garlic-chopped or crushed
  • 1 1/2 tsp
    salt
  • 3 Tbsp
    basil, fresh, chopped
  • 6 tsp
    red wine vinegar
  • 18 Tbsp
    olive oil
  • 3/4 tsp
    pepper
  • SALAD INGREDIENTS

  • 1 lb
    macaroni, cooked, any type
  • 4 c
    tomatoes, chopped
  • 1 pkg
    mozzarella cheese, 8 ozs
  • 1/2 c
    parmesan cheese
  • 1 c
    onion, chopped
  • 2 can(s)
    black olives, pitted

How to Make Dotty's Pasta Salad

Step-by-Step

  1. After cooking macaroni, rinse with cold water. Add all ingredients except dressing. Mix well
  2. Pour dressing over salad and mix well.
  3. Chill and Serve
  4. This recipe is tripled, you can divide it by 3 for all ingredients, for a smaller salad.
