Ingredients
- 1 pound rotini pasta
- 1 pound ground beef (shredded chicken or ground works as well)
- 1 package taco seasoning mix
- 2/3 cup water
- 2 cups tomatoes, diced (i like to use halved grape tomatoes)
- 1 cup onion, diced
- 2 cups cheddar cheese (its great with fiesta blend shredded cheese too)
- 1 - 15.5 ounces can black beans or kidney beans, drained and rinsed
- 1 cup western salad dressing (tastes great with the lite)
- 1 cup mayonnaise
How To Make pasta taco salad

Step 1Pasta: prepare pasta according to package directions. Drain. Rinse with cold water; set aside.

Step 2Beef: In a large skillet, brown beef, drain excess grease. Stir in taco seasoning and water, bring to a boil, reduce heat and simmer for 3-4 minutes or until liquid has absorbed. Set aside until meat is cooled.

Step 3Salad: Toss together cooled meat, pasta, tomatoes, onion, cheese and beans. Mix dressing and mayo together and stir into pasta mixture. Enjoy!
