cheddar macaroni salad w/peas

Ingredients

  • 1 pound box small pasta shells ( cooked and drained)
  • 5 - hard boiled eggs chopped ( keeping 1 in reserve)
  • 4-5 - green onions diced up 3/4ths stem ( or 1 small onion)
  • 1/3 cup diced celery
  • 1/4 cup diced pimentos
  • 2/3 cup cheddar cheese pieces (more or less)
  • 2/3 cup frozen peas ( rinsed and drained)
  • 1 cup miracle whip salad dressing (approx)
  • 1 tablespoon (heaping tbs) sour cream
  • 1/3 cup milk (approx)
  • - salt/pepper to taste
  • - garnish: with celery leaves or parsley leaves
  • - top with sprinkled paprika

How To Make cheddar macaroni salad w/peas

  • Step 1
    In large bowl , add drained macaroni, eggs, onion, celery, pimentos, cheese pieces and drained peas In seperate small bowl mix well salad dressing, sour cream and milk ..including salt and pepper.
  • Step 2
    Pour dressing mixture over macaroni and other ingredients and mix well. Cover bowl and Refrigerate for 4-6 hours .. stir before garnish and serving garnish: egg slices and celery or parsley leaves and few dashes of paprika. Suggestion: for plain macaroni salad leave out peas and cheese ( cook a 1/2 cup of extra shells to make up the difference)
  • Step 3
    NOTE: This salad can be made with mayonnaise instead of salad dressing .. adding 1/2 teaspoon of yellow mustard to 1 cup Mayo along with sour cream and milk.
