Cheddar Macaroni Salad w/peas
Ingredients

1 lbbox small pasta shells ( cooked and drained)

5hard boiled eggs chopped ( keeping 1 in reserve)

4-5green onions diced up 3/4ths stem ( or 1 small onion)

1/3 cdiced celery

1/4 cdiced pimentos
-
2/3 ccheddar cheese pieces (more or less)

2/3 cfrozen peas ( rinsed and drained)
-
1 cmiracle whip salad dressing (approx)
-
1 Tbsp(heaping tbs) sour cream
-
1/3 cmilk (approx)
-
·salt/pepper to taste
-
·garnish: with celery leaves or parsley leaves
-
·top with sprinkled paprika
How to Make Cheddar Macaroni Salad w/peas
- In large bowl , add drained macaroni, eggs, onion, celery, pimentos, cheese pieces and drained peas
In seperate small bowl mix well salad dressing, sour cream and milk ..including salt and pepper. - Pour dressing mixture over macaroni and other ingredients and mix well.
Cover bowl and Refrigerate for 4-6 hours .. stir before garnish and serving
garnish: egg slices and celery or parsley leaves and few dashes of paprika.
Suggestion: for plain macaroni salad leave out peas and cheese ( cook a 1/2 cup of extra shells to make up the difference) - NOTE: This salad can be made with mayonnaise instead of salad dressing .. adding 1/2 teaspoon of yellow mustard to 1 cup Mayo along with sour cream and milk.
