Ingredients For cold soba noodle salad

  • 1 Tbsp
    vegetable oil
  • 1 Tbsp
    sesame oil
  • 1 clove
    garlic, minced
  • 1 Tbsp
    tamari
  • 2 Tbsp
    sweet chile paste
  • 1/2 tsp
    red chili flakes
  • 1/3 c
    peanut butter
  • 2 Tbsp
    fresh lime juice
  • 1 tsp
    fresh lime zest
  • SALAD INGREDIENTS
  • 4 c
    thinly sliced cabbage
  • 1 1/2 c
    snow peas or long beans (cut)
  • 4 Tbsp
    vegetable oil
  • 2 c
    bean sprouts
  • 4
    radishes, sliced thin
  • 1
    red bell pepper, cut into thin strips
  • 2
    scallions, sliced fine
  • 1 lb
    soba noodles
  • 1/8 c
    sesame seeds, toasted
  • 1/8 c
    cilantro, chopped
  • 1/4 c
    chopped peanuts

How To Make cold soba noodle salad

    In a small mixing bowl combine the first 9 ingredients.

    Whisk well and set aside.

    Bring a pot of water to a rolling boil.
  • 4
    Add Soba Noodles and cook according to directions.
  • 5
    Drain, rinse and set aside. (I toss mine with 1 teaspoon of sesame oil to keep them from glopping together-up to you)

    In a wok or large skillet heat the 4 tablespoons of vegetable oil over high heat.

    Add the cabbage and snow peas or cut long beans.
  • 8
    Toss the cabbage and snow peas constantly until cabbage is wilted and snow peas are bright green-around 4 minutes.

    Remove cabbage mixture from heat and pour into a large serving bowl.

    Add cooked soba noodles and toss well.

    Add the bean sprouts, sliced radish, sliced red bell pepper, sliced scallions and toss well.

    Add dressing and toss well.

    Add toasted sesame seeds and cilantro and toss well.

    Sprinkle chopped peanuts on top and serve.
