Ingredients
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
- 1 clove garlic, minced
- 1 tablespoon tamari
- 2 tablespoons sweet chile paste
- 1/2 teaspoon red chili flakes
- 1/3 cup peanut butter
- 2 tablespoons fresh lime juice
- 1 teaspoon fresh lime zest
- SALAD INGREDIENTS
- 4 cups thinly sliced cabbage
- 1 1/2 cups snow peas or long beans (cut)
- 4 tablespoons vegetable oil
- 2 cups bean sprouts
- 4 - radishes, sliced thin
- 1 - red bell pepper, cut into thin strips
- 2 - scallions, sliced fine
- 1 pound soba noodles
- 1/8 cup sesame seeds, toasted
- 1/8 cup cilantro, chopped
- 1/4 cup chopped peanuts
How To Make cold soba noodle salad

Step 1In a small mixing bowl combine the first 9 ingredients.

Step 2Whisk well and set aside.

Step 3Bring a pot of water to a rolling boil.

Step 4Add Soba Noodles and cook according to directions.

Step 5Drain, rinse and set aside. (I toss mine with 1 teaspoon of sesame oil to keep them from glopping together-up to you)

Step 6In a wok or large skillet heat the 4 tablespoons of vegetable oil over high heat.

Step 7Add the cabbage and snow peas or cut long beans.

Step 8Toss the cabbage and snow peas constantly until cabbage is wilted and snow peas are bright green-around 4 minutes.

Step 9Remove cabbage mixture from heat and pour into a large serving bowl.

Step 10Add cooked soba noodles and toss well.

Step 11Add the bean sprouts, sliced radish, sliced red bell pepper, sliced scallions and toss well.

Step 12Add dressing and toss well.

Step 13Add toasted sesame seeds and cilantro and toss well.

Step 14Sprinkle chopped peanuts on top and serve.
