This salad has a wonderful Asian flavor with the soy sauce and the ginger. It's a great side dish to any light summer meal or potluck.

Ingredients

  • 1 cup lite mayonnaise
  • 2 tablespoons soy sauce, low sodium
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon hot pepper sauce (opt.)
  • 3 cups rotini pasta
  • 2 cups chopped cooked chicken
  • 1 cup chinese pea pods
  • 1 cup red pepper, chopped
  • 1/4 cup green onion, sliced

How To Make chinese chicken pasta salad

  • Step 1
    I use boneless/skinless chicken breast and poach it in chicken broth to cook. This can be done ahead and cooled in refrigerator. Cut chicken into cubes. Cook pasta according to directions, drain and cool. slightly steam pea pods just til crisp tender, drain and rinse in cold water to stop cooking.
  • Step 2
    In a large bowl, mix mayonnaise, soy sauce and seasonings. Add the rest of the ingredients and mix well. Refrigerate at least 1 hour before serving. Remove from refrigerator 15 min. before serving to take the chill off. Note: I actually make the dressing a day ahead in a small bowl as well as cook the chicken. When I assemble the salad I save some of the dressing in case I need to add a touch more just prior to serving. Sometimes the pasta will soak up some of the dressing while it sits in the refrigerator.
