cheese tortellini salad at its best
I actually use about 1/2 to 3/4 cup of salad dressing when I prepare this, but my husband always adds additional dressing to his serving. Use a lesser amount to start and add more if desired.

Ingredients
- 3 cups fresh snow peas, cut into 1
- 2 cups broccoli florets
- 2 1/2 cups cherry tomatoes, halved
- 1 can black olives, drained and halved
- 8 ounces cheese stuffed tortellini
- 1 tablespoon grated parmesan cheese
- 1/2 to 1 cups roasted red pepper italian salad dressing

Step 1Drop snow peas into boiling water; boil 1 minute, and remove with a slotted spoon.

Step 2Place broccoli in boiling water; boil 1 minute, and drain.

Step 3Combine peas, broccoli, tomatoes and olives.

Step 4Cook pasta according to package directions; drain, and let cool slightly.

Step 5Combine vegetables, pasta, and 1 tablespoon Parmesan cheese in a large bowl; add salad dressing and toss well.

Step 6Chill several hours before serving. Garnish with additional Parmesan cheese, if desired. Serve with warm french or garlic bread.
