cheese tortellini salad at its best

I actually use about 1/2 to 3/4 cup of salad dressing when I prepare this, but my husband always adds additional dressing to his serving. Use a lesser amount to start and add more if desired.

Ingredients

  • 3 cups fresh snow peas, cut into 1
  • 2 cups broccoli florets
  • 2 1/2 cups cherry tomatoes, halved
  • 1 can black olives, drained and halved
  • 8 ounces cheese stuffed tortellini
  • 1 tablespoon grated parmesan cheese
  • 1/2 to 1 cups roasted red pepper italian salad dressing

How To Make cheese tortellini salad at its best

  • Step 1
    Drop snow peas into boiling water; boil 1 minute, and remove with a slotted spoon.
  • Step 2
    Place broccoli in boiling water; boil 1 minute, and drain.
  • Step 3
    Combine peas, broccoli, tomatoes and olives.
  • Step 4
    Cook pasta according to package directions; drain, and let cool slightly.
  • Step 5
    Combine vegetables, pasta, and 1 tablespoon Parmesan cheese in a large bowl; add salad dressing and toss well.
  • Step 6
    Chill several hours before serving. Garnish with additional Parmesan cheese, if desired. Serve with warm french or garlic bread.
