Ingredients
- SALAD
- 8 ounces small shell pasta
- 1 1/2 cups cauliflower, small florets
- 1 small red onion, sliced
- 1 cup shredded carrots
- 1 cup shredded Swiss cheese
- fresh parsley
- ZESTY RANCH
- 1/2 cup mayonnaise
- 1/2 cup creme fraiche
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1 tablespoon Italian herb Better Than Bouillon
- 1 teaspoon minced dried onions.
- 1 tablespoon whole grain mustard
- 1 clove garlic, minced
- salt and pepper
How To Make cauliflower pasta salad with zesty ranch

Step 1Mix all the ingredients for the dressing together in a food processor and set aside in the refrigerator to let the flavors meld.

Step 2Set a pot of water heavily salted on the stove, and once boiling, add the shell pasta. Cook for 15 minutes until almost done.

Step 3Then add the cauliflower and cook 3 more minutes. Drain and rinse under cold water until cooled.

Step 4Add the shredded carrots, Swiss cheese, and red onion.

Step 5Mix with the ranch dressing taste and adjust for salt and pepper. Serve garnished with parsley.
