ARUGULA AND COUSCOUS SALAD
1 1/2 cwater
1/8 cred wine vinegar
1/4 colive oil, extra virgin
1 ccooked lintils
2 cchopped arugula
4scallions chopped fine
1 smalldiced cucumber and seeded
1 ptcherry tomatos cut in half
1/2 cfeta cheese
How to Make ARUGULA AND COUSCOUS SALAD
- Bring water to boil, remove from heat add couscous and cover. When liquid is absorbed, about 10 minutes, transfer to a salad bowl, toss with lemon juice and olive oil.
- Add 1 cup lintils cooked, add arugula, scallions, cucumber and cherry tomato halves.
- Just before serving, add feta cheese, toss and serve.
