arugula and couscous salad

This arugula goes great with, just about any food. I like it with a good tuna sandwich, or a bowl of French onion soup.

Ingredients

  • 1 1/2 cups water
  • 1 cup couscous
  • 1/8 cup red wine vinegar
  • 1/4 cup olive oil, extra virgin
  • 1 cup cooked lintils
  • 2 cups chopped arugula
  • 4 - scallions chopped fine
  • 1 small diced cucumber and seeded
  • 1 pint cherry tomatos cut in half
  • 1/2 cup feta cheese

How To Make arugula and couscous salad

  • Step 1
    Bring water to boil, remove from heat add couscous and cover. When liquid is absorbed, about 10 minutes, transfer to a salad bowl, toss with lemon juice and olive oil.
  • Step 2
    Add 1 cup lintils cooked, add arugula, scallions, cucumber and cherry tomato halves.
  • Step 3
    Just before serving, add feta cheese, toss and serve.
