Ingredients

  • 1 1/2 c
    water
  • 1 c
    couscous
  • 1/8 c
    red wine vinegar
  • 1/4 c
    olive oil, extra virgin
  • 1 c
    cooked lintils
  • 2 c
    chopped arugula
  • 4
    scallions chopped fine
  • 1 small
    diced cucumber and seeded
  • 1 pt
    cherry tomatos cut in half
  • 1/2 c
    feta cheese

How to Make ARUGULA AND COUSCOUS SALAD

Step-by-Step

  1. Bring water to boil, remove from heat add couscous and cover. When liquid is absorbed, about 10 minutes, transfer to a salad bowl, toss with lemon juice and olive oil.
  2. Add 1 cup lintils cooked, add arugula, scallions, cucumber and cherry tomato halves.
  3. Just before serving, add feta cheese, toss and serve.
