arugula and couscous salad
This arugula goes great with, just about any food. I like it with a good tuna sandwich, or a bowl of French onion soup.

Ingredients
- 1 1/2 cups water
- 1 cup couscous
- 1/8 cup red wine vinegar
- 1/4 cup olive oil, extra virgin
- 1 cup cooked lintils
- 2 cups chopped arugula
- 4 - scallions chopped fine
- 1 small diced cucumber and seeded
- 1 pint cherry tomatos cut in half
- 1/2 cup feta cheese
How To Make arugula and couscous salad

Step 1Bring water to boil, remove from heat add couscous and cover. When liquid is absorbed, about 10 minutes, transfer to a salad bowl, toss with lemon juice and olive oil.

Step 2Add 1 cup lintils cooked, add arugula, scallions, cucumber and cherry tomato halves.

Step 3Just before serving, add feta cheese, toss and serve.
