This recipe was given to me by a friend who knew how much I loved artichokes. Its easy and delicious.

Ingredients
- 1 pound uncooked pasta, your favorite shape (spirals, shells, etc)
- 1 medium head of broccoli, cut into bite sized pieces
- 1 small red bell pepper, sliced into thin strips
- 1 small yellow bell pepper, sliced into thin strips
- 1 small sweet red onion, sliced thin
- 2 jars (6 1/2 ounces) marinated artichokes, drain and reserve liquid
- 1/2 cup shredded romano cheese (or parmesan)
- - sea salt and freshly ground black pepper to taste
- 1 pinch red pepper flakes, optional
How To Make artichoke pasta salad

Step 1Cook pasta according to package directions. Add cut broccoli during the last 3 minutes of cooking time. Drain and rinse with cold water. In a large bowlmix all ingredients, adding as much of the artichoke marinade as you like. Season to taste. Chill for 3-4 hours to blend flavors before serving. Best served cold.
