"anything goes" pasta salad

Feel free to use the pasta of your choice. The wagon wheels sometimes entices kids to eat this pasta salad they might otherwise not try. LOL. Prep time includes 1 hour of chilling time.

Ingredients

  • 16 ounces package wagon wheel macaroni (may sub shells or elbow)
  • 1/4 cup olive oil
  • - salt, to taste
  • - pepper, to taste
  • 2 cans artichoke hearts, drained and halved (14 oz cans)
  • 1/2 cup roasted red pepper strips
  • 3 ounces jar capers, drained
  • 6-8 - sun-dried tomatoes, cut into strips
  • 1/2 cup parmesan cheese, grated
  • 1/3 cup fresh italian parsley, chopped
  • 3 cloves garlic, minced
  • 3/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/4 cup fresh lemon juice
  • 1 - egg yolk
  • 1 teaspoon dry mustard
  • 1 teaspoon dried whole basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon hot sauce (optional)
  • 1/2 cup pine nuts, toasted

How To Make "anything goes" pasta salad

  • Step 1
    Cook macaroni according to the package directions; drain. Place macaroni in a large bowl. Add 1/4 cup oil and salt and pepper to taste.
  • Step 2
    Add artichoke hearts, roasted pepper, capers, tomato, cheese, and parsley; stir gently to combine. Set aside.
  • Step 3
    Position knife blade in a food processor bowl. Add garlic, next 8 ingredients, and if desired, hot sauce, and process until smooth.
  • Step 4
    Pour dressing over pasta mixture; toss well. Cover and marinate in the refrigerator for 1 hour. Sprinkle with pine nuts just before serving.
