Feel free to use the pasta of your choice. The wagon wheels sometimes entices kids to eat this pasta salad they might otherwise not try. LOL. Prep time includes 1 hour of chilling time.

package wagon wheel macaroni (may sub shells or elbow)
1/4 c
olive oil
salt, to taste
pepper, to taste
2 can(s)
artichoke hearts, drained and halved (14 oz cans)
1/2 c
roasted red pepper strips
3 oz
jar capers, drained
sun-dried tomatoes, cut into strips
1/2 c
parmesan cheese, grated
1/3 c
fresh italian parsley, chopped
3 clove
garlic, minced
3/4 c
olive oil
1/4 c
white wine vinegar
1/4 c
fresh lemon juice
egg yolk
1 tsp
dry mustard
1 tsp
dried whole basil
1/4 tsp
1/8 tsp
1/4 tsp
hot sauce (optional)
1/2 c
pine nuts, toasted

How to Make "Anything Goes" Pasta Salad


  • 1Cook macaroni according to the package directions; drain. Place macaroni in a large bowl. Add 1/4 cup oil and salt and pepper to taste.
  • 2Add artichoke hearts, roasted pepper, capers, tomato, cheese, and parsley; stir gently to combine. Set aside.
  • 3Position knife blade in a food processor bowl. Add garlic, next 8 ingredients, and if desired, hot sauce, and process until smooth.
  • 4Pour dressing over pasta mixture; toss well. Cover and marinate in the refrigerator for 1 hour. Sprinkle with pine nuts just before serving.
