Feel free to use the pasta of your choice. The wagon wheels sometimes entices kids to eat this pasta salad they might otherwise not try. LOL. Prep time includes 1 hour of chilling time.

  • 16 oz
    package wagon wheel macaroni (may sub shells or elbow)
  • 1/4 c
    olive oil
  • ·
    salt, to taste
  • ·
    pepper, to taste
  • 2 can(s)
    artichoke hearts, drained and halved (14 oz cans)
  • 1/2 c
    roasted red pepper strips
  • 3 oz
    jar capers, drained
  • 6-8
    sun-dried tomatoes, cut into strips
  • 1/2 c
    parmesan cheese, grated
  • 1/3 c
    fresh italian parsley, chopped
  • 3 clove
    garlic, minced
  • 3/4 c
    olive oil
  • 1/4 c
    white wine vinegar
  • 1/4 c
    fresh lemon juice
  • 1
    egg yolk
  • 1 tsp
    dry mustard
  • 1 tsp
    dried whole basil
  • 1/4 tsp
  • 1/8 tsp
  • 1/4 tsp
    hot sauce (optional)
  • 1/2 c
    pine nuts, toasted

How to Make "Anything Goes" Pasta Salad


  1. Cook macaroni according to the package directions; drain. Place macaroni in a large bowl. Add 1/4 cup oil and salt and pepper to taste.
  2. Add artichoke hearts, roasted pepper, capers, tomato, cheese, and parsley; stir gently to combine. Set aside.
  3. Position knife blade in a food processor bowl. Add garlic, next 8 ingredients, and if desired, hot sauce, and process until smooth.
  4. Pour dressing over pasta mixture; toss well. Cover and marinate in the refrigerator for 1 hour. Sprinkle with pine nuts just before serving.
