amish style macaroni salad
Every region or nationality seems to have its own version of Macaroni Salad. It's interesting to see the small nuances of variations! I tweaked this one from a blog of Amish recipes. (Cooking time includes chilling of the completed salad before serving and also cooking the pasta and eggs. If the eggs and macaroni are cooked and chilled ahead, then total time would be less.)

Ingredients
- 2 cups elbow macaroni, dry - 4 cups cooked
- 2 - hard boiled eggs, chopped
- 3/4 cup onion, chopped
- 1 cup green pepper, chopped (can mix green and red pepper)
- 1/2 cup celery, chopped
- 1 cup mayonnaise
- 1 tablespoon sugar
- 2 tablespoons cider vinegar
- 1/2 teaspoon celery seed
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon ground black pepper
How To Make amish style macaroni salad

Step 1Cook the macaroni, drain and cool. Meanwhile. boil eggs, cool, shell and chop. Combine cooled macaroni, chopped eggs and veggies in a large bowl and set aside.

Step 2In a small bowl, combine mayonnaise, sugar, salt and spices. Stir until smooth and pour into macaroni. Stir gently to combine. If salad seems too dry, add a little milk. Chill for an hour or more before serving.
