This is a salad, but folks will think this is dessert. The most requested for picnics, outings, get togethers, etc.

Ingredients

  • 1 box acini pasta
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 3 - eggs (beaten)
  • 1 tablespoon flour
  • 1 3/4 cups pineapple juice ( saved from cans of pineapple)
  • 1 can 20 oz crushed pineapple
  • 1 can 20 oz tidbits pineapple
  • 1 - 8 oz carton cool whip
  • 2 cans 11 oz mandarin oranges
  • 1 small package miniature marshmallows

How To Make acini de pepe

  • Step 1
    Start one day ahead.
  • Step 2
    Combine sugar, salt, flour, juice and eggs Cook over medium heat, stirring constantly until thick. Cool completely.
  • Step 3
    Boil, in salted water, 1 box Acini. Drain, rinse and cool. Place in large bowl, and mix with cooked mixture. Cover, and put in fridge overnight.
  • Step 4
    Day two
  • Step 5
    Add both cans drained pineapple, cool whip, oranges (not drained), and package of small marshmallows.
  • Step 6
    Mix well and chill.
  • Step 7
    Enjoy!
