Ingredients
- SALAD
- 2 tablespoons olive oil
- 8 slices bacon
- 1 red onion sliced
- 2 cups frozen peas
- salt & pepper
- 2 cups packed pea shoots
- 1 cup shredded parmesan cheese
- LEMON DRESSING
- juice and zest of 1 lemon
- 3 tablespoons olive oil
- 1 small clove of garlic minced
- 1 teaspoon brown sugar
- salt & pepper to taste
How To Make warm bacon & pea salad with lemon dressing

Step 1Prepare the dressing by whisking all ingredients together and set aside.

Step 2In a large skillet add the oil over high heat and add the bacon and cook about 5 minutes. Add the onion and lower heat to medium and cook another 5 minutes stirring often.

Step 3Add the peas and season with salt and pepper and cook for 4 or 5 minutes. Turn off the heat and add the pea shoots. Toss to coat.

Step 4Transfer to a bowl and top with Parmesan and dressing.
