virginia baked / ham salad
This was my quick lunch. Could easily feed two. I like ham salad, and especially with good ham. I buy blocks of Virginia Baked Ham and use it for this, and chop it up in my chef salads. You could easily double the recipe for more servings. Normally I add a hard boiled egg, didn't have any prepared to use today. This took a total of 5 minutes to whip together... Enjoy! My photos

How To Make virginia baked / ham salad
-
Step 1Place ham, pickle, onion and egg if using into food processor. Pulse till all is chopped fairly fine.
-
Step 2Scoop into bowl, add cheese, mayo, mustard , egg, pepper and stir until well combined. Eat with greens on a plate, or use in a sandwich. It's delicious either way. I have this typically for a low carb lunch. Enjoy!
-
Step 3I have also spread this on buns, and broiled in the oven, the cheese melts and makes it a delicious ham salad melt sandwich..
