This is a fresh cool summer salad that packs a bit of heat. You can use any combination of veggies you want anything fresh from the garden. I have made this salad with many different kinds of veggies. Always delicious.

Ingredients
- 8 ounces vermicelli rice noodles
- 1 tablespoon olive oil
- 16 large shrimp peeled deveined and cooked
- 1 cup chopped cucumbers
- 1/2 cup bean sprouts
- 1 large carrot cut into match sticks
- 1 cup cilantro chopped
- 1/2 cup peanuts chopped
- SPICY VINAIGRETTE
- 1/4 cup each lime juice fish sauce and soy sauce
- 1 1/2 tablespoons sambal oelek chili paste
- 4 cloves garlic minced
- 1/2 cup brown sugar
How To Make vietnamese spicy shrimp and veggie noodle salad

Step 1Cook the noodles according to package directions drain and run cold water over top until cool then drizzle olive oil over the noodles so they don't stick together.

Step 2Mix the ingredients for the vinaigrette together.

Step 3Plate the noodles first then top with veggies shrimp and peanuts drizzle the vinaigrette over the veggies and top with cilantro. Enjoy
