This can be a salad or you can put it on toast. It's good served with Tomato Basil Soup.

  • 1/2 c
    safeway select basil ranch dressing
  • 3 Tbsp
    dijon mustard
  • 1 Tbsp
    prepared horseradish
  • 3 Tbsp
    chopped fresh parsley, divided
  • 15 oz
    can red or pink salmon
  • 15 oz
    can cannellini beans, drained and rinsed
  • 1/2 c
    celery, diced
  • 1/2 medium
    red bell pepper, diced
  • 1/4 c
    red onion, chopped
  • 1/4 c
    black olives, sliced
  • ·
    romaine lettuce leaves, torn into bite-size pieces
  • ·
    croutons (opt.)

How to Make Tuscan Salmon Salad


  1. Mix dressing, mustard, horseradish and 1 tbsp parsley; set aside.
  2. Flake salmon in a bowl, toss with beans, celery, red bell pepper, onion, olives and the other 2 tbsp parsley.
  3. Mix in about 3 tbsp of dressing mixture to moisten.
  4. Serve over romaine lettuce in individual bowls with croutons and leftover dressing mixture.
