This can be a salad or you can put it on toast. It's good served with Tomato Basil Soup.

1/2 c
safeway select basil ranch dressing
3 Tbsp
dijon mustard
1 Tbsp
prepared horseradish
3 Tbsp
chopped fresh parsley, divided
15 oz
can red or pink salmon
15 oz
can cannellini beans, drained and rinsed
1/2 c
celery, diced
1/2 medium
red bell pepper, diced
1/4 c
red onion, chopped
1/4 c
black olives, sliced
romaine lettuce leaves, torn into bite-size pieces
croutons (opt.)


1Mix dressing, mustard, horseradish and 1 tbsp parsley; set aside.
2Flake salmon in a bowl, toss with beans, celery, red bell pepper, onion, olives and the other 2 tbsp parsley.
3Mix in about 3 tbsp of dressing mixture to moisten.
4Serve over romaine lettuce in individual bowls with croutons and leftover dressing mixture.
