Perfect for summer! Light and refreshing, this salad is portioned to take to a BBQ or summer pool party. The recipe can be halved if needed. I look forward to making this every summer.

Ingredients

  • 4 medium cucumbers
  • 1 medium red onion
  • 2 tablespoons fresh dill chopped (or more, I add more)
  • 2 cups seasoned rice wine vinager
  • 1 1/2 cups granulated sugar
  • 1 cup water

How To Make tom's cucumber salad

  • Step 1
    On the stovetop, gently heat vinegar, water, sugar, and dill. Stir till sugar is fully incorporated and the mixture isn't cloudy anymore. Remove from heat and set aside.
  • Step 2
    Slice cucumbers and onions thinly (ideally with a mandolin) and gently toss to combine ingredients.
  • Step 3
    Pour liquid over cucumber mixture and gently toss again.
  • Step 4
    Cover and refrigerate for a few hours if you can stand it. Will keep for about a week in the fridge, but mine never lasts that long. Enjoy!
