tom's cucumber salad
Perfect for summer! Light and refreshing, this salad is portioned to take to a BBQ or summer pool party. The recipe can be halved if needed. I look forward to making this every summer.

Ingredients
- 4 medium cucumbers
- 1 medium red onion
- 2 tablespoons fresh dill chopped (or more, I add more)
- 2 cups seasoned rice wine vinager
- 1 1/2 cups granulated sugar
- 1 cup water
How To Make tom's cucumber salad

Step 1On the stovetop, gently heat vinegar, water, sugar, and dill. Stir till sugar is fully incorporated and the mixture isn't cloudy anymore. Remove from heat and set aside.

Step 2Slice cucumbers and onions thinly (ideally with a mandolin) and gently toss to combine ingredients.

Step 3Pour liquid over cucumber mixture and gently toss again.

Step 4Cover and refrigerate for a few hours if you can stand it. Will keep for about a week in the fridge, but mine never lasts that long. Enjoy!
